Along these lines, what real-life or fictional non-GI Joe character would make a good member of the Adventure Team? Besides Drbindy's great choices, off the top of my head I would say Chuck Yeager, McGuyver, Mick "Crocodile" Dundee, and Sam and Dean Winchester (from Supernatural).

You know when I first started to add to the Adventure Team, specifically, it was hand in hand with the AT group project from years ago here at JCs. For that I made
Steve Austin ($6m man) and
Race Bannon Adventure Teamers. I later made
Benton Quest a scientist for the AT, and at the time made reference to
Dirk Pitt (the Clive Cussler novels) as an old man who had once been a member of the team (though I may ret-con him into the movie version). Plus then the ones you mentioned. And I just recently added my take on Joe and Jane Colton.
Others I've considered (beyond some Joes I will add) are
Colt Seavers (Fall Guy),
Ben Gates (National Treasure), anyone from
Big Jim,
Doc Savage at one point (though I gave him a larger role, and now my make him a 2nd or 3rd generation Clark Savage, just so I can also have a pulp version).
Some variation of
Indiana Jones or
Alan Quatermain could work, depending on how era sensitive you are (and I'm thinking of focusing more on proper eras myself).
Lara Croft is a shoe-in, as is the main guy from Uncharted. I had an obscure character from a book called the cryptonomicon who was an adventure/diver named Amy Shaftoe who I wanted to add, but seemed too obscure.
To go with the Mythbusters and Steve Irwin from my non-fiction AT, I also planned on making
Mack (Futureweapons) but all the cool bald heads I had kept getting used for my self customs

You could argue for Bear Gryllis or Survivorman I suppose as well. Hell, the guys from Top Gear would be fun for working the AT garage, lol.
There's really no end in sight from both real life and fiction. That's kind of what makes it all so fun.
Chief has some great non-Joe additions to his AT also.
