2 seater conversions have already been done. I don't know if they used the vintage seats or not. But yeah, I would say it is possible.
But even the cockpit can be taken apart with some work. I am not sure how that work is done, but someone I traded with did it. I ended up with his slightly used Skystriker and it was fine when I put it back together.
